Organic emmer flour, milled from emmer grown by Patty and Andrew Harris near Stonewall Manitoba.  Emmer is one of the oldest of the ancient varieties of wheat with a lower gluten content than modern wheat varieties.  Modern wheat varieties are bred for higher gluten because more gluten means it's easier to make light fluffy loaves, but the trade-off is a flour that's jam packed with nutrients and flavour, so it's certainly worth the extra effort!
